Ingredients

  • 1 CupCorn Meal
  • 1/4 CupCorn Flour
  • 1-1/4 CupCooked Quinoa
  • 1 TbspBaking Powder
  • 1/2 TspBaking Soda
  • 3/4 TspSea Salt
  • 1 CupButtermilk
  • 3 TbspChia Seeds + 9 Tbsp Water
  • 1/4 CupVegetable Oil
  • 1 TbspHoney
  • 1/2 CupFresh Coriander, Chopped
  • 1Green Chilli, Minced
  • 2 TbspShredded Beets

Steps

25 minutes
  1. 1

    Preheat Oven To 200C.

  2. 2

    Mix Chia Seeds And Water In A Bowl And Set Aside For 15 Minutes.

  3. 3

    In A Large Bowl, Sift Dry Ingredients And Add Cooked Quinoa.

  4. 4

    In Separate Bowl Whisk Together All Wet Ingredients, Including The Chia Gel.

  5. 5

    Mix Dry And Wet Ingredients, Also Fold In Chopped Coriander, Green Chilli And Grated Beets.

  6. 6

    Spoon Batter Into Muffin Cups And Bake Until The Edges Are Golden Brown, Aprox. 25 Minutes.
