1 tbspOlive Oil
1 packagesAndouille Sausage, thinly sliced
3 cloveGarlic, minced
1Onion, diced
3Carrots, sliced and peeled
2stock Celery, chopped
2 canGreat Northern Beans, drained
1/2 tspDried Oregano
2Bay Leaves
4 cupChicken Broth
3 cupBaby Spinach
1Salt and Pepper to taste

Heat olive oil in a large skillet, and add sausage. Cook sausage until brown.

Add all ingredients, including sausage, to crock pot.

Cook on low for 7-8 hours. Or cook on high for 3-4 hours.
