Ingredients

  1. 1/4 cupolive oil plus more for brushing chicken
  2. 9garlic cloves, sliced
  3. 1/3 cupwhite wine
  4. 1 tbspfinely grated lemon rind
  5. 2 tbsplemon juice
  6. 3/4 tspdried oregano
  7. 1/4 tspdried thyme
  8. 1/2 tspsalt, divided
  9. 2bone-in, skin-on chicken breasts or 4 thighs
  10. 1freshly ground black pepper
  11. 1lemon cut into wedges

    Preheat oven to 400°F

  2. 2

    Heat olive oil in a small skillet over medium heat. Add garlic and cook about 2 min. Remove from heat.

  3. 3

    Combine wine, lemon rind and juice, oregano, thyme and 1/4 tsp. salt in a baking dish. Stir well. Pour in oil and garlic. Stir well. Place chicken pieces on top of garlic mixture, skin side up. Brush skin with a little additional olive oil. Sprinkle with remaining 1/4 tsp. salt and pepper. Tuck lemon wedges in around chicken. Bake 30-35 min. Remove from oven and let stand 5-10 min. before serving.
