Lovely blend of your favourite vegetables for an easy kurma gravy. Goes well with rice, pulavs, Indian breads.
Steps

Soak the khus khus in 1/2 cup water for 10inutes. Grind with coconut to a smooth paste and keep aside.

Wash and chop vegetables in equally sized peices.

Start tempering. Heat 2 tbsp oil in a pressure pan. Add the whole spices. Saute.

Add the ginger garlic paste and saute. Now add chopped onions and saute till transperant.

Next add the tomatoes and saute. Add salt and masala powders. Cover and cook till mushy.

Now add the khus khus paste and saute for 1 to 2 minutes till oil leaves the sides.

Add the chopped vegetables now. Add 2 to 3 cups of water. Mix well. Pressure cook for 2 whistles.

Let the pressure release. Open and add lots of chopped coriander. Serve with rice, chapatis, naans or pulavs. Enjoy.
