This recipe goes together very fast. I use an electric skillet to make it. After the broth boils I turn it down to 250. Stir now and then while you help the kids with homework. Great taste and very tender.

Ingredients

  1. 6Boneless pork chops
  2. 1/2 cupFlour
  3. 2 tbspOlive oil
  4. 2 tspThyme
  5. 1/2 tspSalt
  6. 1/4 tspBlack pepper
  7. 2 canLow salt beef broth (14.5 oz each)
  8. 4 largepotatoes (cut into bite sized pieces)
  9. 5Carrots (cut into bite sized pieces)
  10. 1 mediumonion (diced)

Cooking Instructions

    You can cut the pork into bite sized pieces or leave the pork chops whole.

    Dredge the pork in the flour

  3. 3

    Heat the oil in a large skillet. Brown the pork on both sides.

  4. 4

    Sprinkle with thyme, salt and pepper.

  5. 5

    Add beef broth, potatoes, carrots and onion.

  6. 6

    Bring to boil. Reduce heat.

  7. 7

    Cover and simmer for 40-50 min until pork and vegetables are tender.
