Ingredients

  • 1/2 cuprum
  • 1scallops
  • 1 tbspcilantro
  • 1lime haved
  • 1 tbspminced garlic
  • 1julienned red pepper
  • 1julienned bell pepper
  • 4 ozbaby spinach per serving
  • salt & pepper
  • 1 dozenhalved cherry tomatoes
  • 2 tbspbutter

Steps

  1. 1

    Heat rum in large saucepan

  2. 2

    Add scallops, butter, garlic and squeeze have of lime. sautée until done

  3. 3

    Add in peppers, tomatoes salt and pepper and the other have of the lime.

  4. 4

    Add in spinach toss and plate

  5. 5

    Julienne the halved avocados and arange the scallops and avocados atop the salad
