Preheat oven to 350°F and line two large baking sheets with parchment paper.

Combine the flour, baking powder and salt in a separate bowl.

Beat the butter, eggs, sugar and extract together in another bowl until well mixed.

Slowly mix in the the flour mixture.

If desired add any fruit or nuts at this point (optional).

Divide the dough in half and form two logs, each about 2-1/2 inches wide, 1 inch high, and 9 inches long.

Whisk the egg white until foamy to make the egg wash.

Place on baking sheets and brush with the egg wash (egg white).

Bake for about 35 minutes or until nicely golden. Remove and let cool to room temperature. Cut the logs into 1/2 x 2-1/2p inch pieces. Place those on their side and bake for about 10 minutes then flip and bake for about another 5.
