Add the oil, milk, sugar, vanilla, and lemon zest to the blender. Blend very well until the mixture is frothy. (You can also put everything in a bowl and beat with an electric mixer or by hand, but make sure to incorporate plenty of air into the mixture.)

Once blended or well beaten, pour the mixture into a bowl and add the self-rising flour. Beat until the batter is smooth and has a consistency similar to boxed cake mix.

Grease a Bundt or round cake pan and pour in all the batter. Bake in a preheated oven at 350°F (180°C) for about 35 minutes. Check for doneness by inserting a toothpick—if it comes out dry, the cake is ready! Remove from the oven and let cool. If you like, dust with powdered sugar or enjoy as is. My daughter loved it filled with dulce de leche!
