Toss the meat with 2 tbs. of chili powder in a large bowl and refrigerate a few hours or overnight.

Cook meat in large skillet. Transfer meat to slow cooker or soup pot using slotted spoon leaving behind grease.

Reduce heat to med- low and add onions. Cook until translucent. Add to pot.

Add roasted garlic, cumin, salt, pepper, remaining 3 tbs of chili powder to pot

Stir in tomatoes and paste and beer. Bring to boil then reduce to simmer.

Drain beans and add to pot. Grab handful of brown sugar and toss it in. Dump a decent amount of red pepper flakes. Cover and cook at least 3 hours, all day if you can. I usually taste every hour and decide if I need more pepper flakes or sugar
