Ingredients

  • 1 tbspOlive oil
  • 1 smallchopped Onion
  • 2 cloveCrushed and chopped garlic
  • 1 cupUncooked rice
  • 1 cupWater
  • 1 tspGround cumin
  • 1 tspOregano
  • 1 1/2 cupCooked Black Beans
  • 400 gramsDiced Tomatoes
  • 3/4 cupCorn

Steps

  1. 1

    Heat Pan on medium heat

  2. 2

    Add oil and garlic, soften for about 4 minutes

  3. 3

    Add rice and cook for 2 minutes, stirring constantly

  4. 4

    Add remaining ingredients and bring to boil

  5. 5

    Lower heat (to 3 or 4) and simmer for 20 minutes, covered
