  • 1 bunchItalian parsley (about one cup)
  • 3 tbspWhite wine vinegar
  • 1/4 cupEVOO
  • 1/4 cupVeganaise
  • 3 tbspWater
  • 1 tbspXylitol
  • 1/2 tspCoarse sea salt
  • 1/4 tspFreshly ground pepper

    Combine all ingredients in a blender and blitz until puréed. Keeps well in a jar in the fridge for up to a week. Makes 1 1/4 cups
