oven to 450. coat foil sheet with cooking spray

top half of each foil sheet with 1.5 cups of spinach, 1/4 of bell pepper, 1 snapper filet. sprinkle on salt and pepper. fold other half of foil sheet over filling and crimp edges to seal.

arrange packets on a baking sheet, bake for 10-12 min, or until packets puffed. slit the top to allow steam to escape. wait a min. peal back foil. top each fillet with 1 tbsp pesto.
