  1. 1Very lean roast, trim the fat
  2. 1 mediumonion, chopped
  3. 1Celery stalk, whole, chopped
  4. 1 cupWater
  5. 1as needed Salt, pepper, minced garlic, spice blend.

    Place all ingredients in crock pot and cook low for 8-12 hours.

    This is yummy by itself or roll in lettuce wraps or atop a bed of shredded lettuce.
