Greek Style Quinoa Salad

This makes for a protein packed, fresh lunch. Perfect for if you have some leftover quinoa sitting in the fridge. It keeps for a few days, so it's good for meal prepping. It's also easy to customize it to your liking. If you're not a fan of quinoa, I'm betting this would be really good as a pasta salad, or over some chopped romaine. If you'd like to take the 'bite' out of the raw onions, then soak them in some cold water for a few minutes before adding them.

Ingredients

6 servings
  1. Salad :
  2. 3 cupscooked and cooled quinoa (1 cup uncooked)
  3. 1 can (15 oz.)chickpeas, drained and rinsed
  4. 1small bell pepper, diced (I use either yellow or orange)
  5. 1 1/2 cupquartered English cucumbers
  6. 1/2 cupdiced red onion
  7. 1/2 cupquartered grape tomatoes
  8. 1/4 cupsliced kalamata olives
  9. Feta cheese, for serving
  10. Dressing :
  11. 1/4 cupextra virgin olive oil
  12. 2 tbsp.red wine vinegar
  13. Juice from 1/2 lemon
  14. 1 clovegarlic, grated
  15. 1 tsp.honey
  16. 1/2 tsp.dried oregano
  17. 1/4 tsp.each dried basil, dried dill, black pepper, salt

Steps

  1. 1

    Chop and place all of your veggies in a large bowl. I'm not a fan of olives, so I generally leave them out.

    Stir in the cooked quinoa and the drained and rinsed chickpeas.

    Whisk together all of the dressing ingredients.

    Pour the dressing over the quinoa and veggies and toss to evenly coat.

    That's it! I would recommend letting this chill for a couple of hours before eating, so the flavors have time to steep together. Store this in a large airtight container in the fridge. Or if meal prepping, go ahead and portion out the salad evenly into 6 individual sized containers.

    Serve it up with some feta cheese sprinkled over the top.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
