Ingredients

4 servings
  1. 1 lblean beef round roast, cubed
  2. 1onion, chopped
  3. 1bell pepper, chopped
  4. 3garlic cloves, minced
  5. 2medium potatoes, diced
  6. 1/2 lbbaby carrots
  7. 1/2 cubeBeef bouillon
  8. 1 cupwater
  9. 8 ozlight beer
  10. 1/4 cupevaporated milk, fat-free
  11. 2 tbspcornstarch
  12. 1 tsppaprika

Cooking Instructions

  1. 1

    Coat a large nonstick skillet with cooking spray and heat over medium-high heat. Add beef, onion, pepper and garlic; cook until beef is browned, stirring, about 3 minutes.

    Stir in potatoes, carrots, bouillon, water, and beer; bring to a boil, reduce heat, cover and simmer until meat, carrots and potatoes are tender, about 30-45 minutes.

    Stir together evaporated milk, cornstarch and paprika in a small cup; add to beef mixture and stir to combine. Cook until slightly thickened and bubbly, about 5 minutes; cook, stirring occasionally, for 2 minutes more.

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more. If you have any suggestions for any of my recipes regarding ingredients or cooking methods please send me a message!!
