2 serving
  • 3finger ripe plantain
  • 1/2 cupvegetable oil
  • 3eggs
  • 1carrot diced
  • 1/2maggi
  • 1/2onion bulb chopped
  • 2fresh pepper sliced
  • to tastesalt

Steps

  1. 1

    Pour oil in pan, peel ripe plantain cut to any shape then fry plantain for 7min

  2. 2

    Break and whisk add maggi,carrot,onions and pepper then stir

  3. 3

    Reduce oil to one tablespoon then pour egg and fry flip the other side after 2min

  4. 4

    Serve plantain and egg in a plate and enjoy.
