Ingredients

  • 3tomatoes diced
  • 1cucumber diced
  • 1orange bell diced
  • 1/2red onion
  • 1 cupkalamata olives, cut in quarters (Dan likes some green thrown in)
  • 1/2 cupcrumbled goat cheese
  • 1garlic clove very finely minced
  • 1/2 cupextra virgin olive oil
  • 1 Tbspwhite wine vinegar (you can use regular vinegar)
  • 1 Tbsplemon juice
  • 1/2 tspdried oregano
  • 1/2 tspsalt
  • to taste Fresh ground black pepper

Steps

  1. 1

    Toss together, let sit in the fridge for 10 minutes before serving. It lets the acid from the vinegar and lemon juice pull the flavors out and together. Kind of like pickling.
