Combine flour, cornmeal,sugar,baking soda & salt in a large mixing bowl. whisk to combine. add eggs,oil,buttermilk,lemon juice & vanilla extract. whisk until blended. stir in lemon zest. let batter rest for 5 minutes before using

Preheat a waffle maker. spray oil on the surface of waffle maker. pour 1-2 tbsp of batter & spread out evenly. close the lid ofthe waffle maker. after 3-4 minutes open the lid. carefully remove the baked waffle in a serving plate. repeat with remaining batter. (u can also store the batter in refrigerator for 2-3 days)

If u dnt have waffle maker u can prepare pancakes from this batter.
