Ingredients

  1. 10Thai eggplants, quartered and soaked in salted water
  2. 7 oz (200 grams)high-quality fish balls
  3. 3/4 cupcoconut milk (200 ml)
  4. 5fresh red chilies, sliced diagonally
  5. 1 tablespoongreen curry paste
  6. 1 tablespoonfish sauce
  7. 2 teaspoonssugar
  8. leavesThai basil

Steps

  1. 1

    If the fish balls are large, cut them in half.

  2. 2

    Over medium heat, add the coconut milk to a deep pot. When it starts to boil, add the green curry paste and stir until dissolved and fragrant.

  3. 3

    Add the Thai eggplants and cook until boiling and tender. Add the fish balls, fish sauce, and sugar. Taste and adjust the seasoning as needed.

  4. 4

    Add the sliced chilies and Thai basil leaves. Let it cook briefly, then turn off the heat and serve.
