Ingredients

6 servings
  • 2 cupplain flour / maida
  • 1 tspcarom seeds / ajwain
  • to tastesalt
  • 1/2 tspsugar
  • 4-6 tspghee melted
  • 5-6 tbspwater / as required
  • for stuffing masala:
  • 3 tspghee / clarified butter
  • 1 tspcumin seeds / jeera
  • 2boiled potato peeled
  • 1 cupboiled peas,american corn,peanuts
  • 1/2 tspred chilli powder
  • 1 inchginger chopped
  • 1/2 tspdried mango powder / amchur
  • 1/2 tspgaram masala
  • to tastesalt
  • 1 tsproasted and crushed coriander seeds
  • for deep frying:
  • oil for deep frying
  • for serving
  • as neededgreen chutney tomato ketchup, tamarind chutney

Steps

  1. 1

    For the dough:

    in a large mixing bowl take maida, ajwain, salt, sugar and melted ghee.

    Now add water to knead into a stiff dough.

  3. 3

    Cover and rest for 15 minutes.

    For the stuffing:

    heat the ghee and add the cumin seeds.

  5. 5

    Add chopped ginger and saute for few seconds.

  6. 6

    Mash the potatoes with your hand and add to tempering.

  7. 7

    Now add all the spices like chilli powder, amchur powder, garam masala and salt.

  8. 8

    Now add the roasted crushed coriander seeds, mix well

  9. 9

    Finally add peas boiled corn and peanuts and cook another 2 - 3 minutes.

    Shaping, stuffing the samosa:

    knead the dough well.

  11. 11

    Roll out a portion of the dough in oval shape.

  12. 12

    Now cut it horizontally, diving into 2 equal portions using a knife.

  13. 13

    Grease with water and make cone.

  14. 14

    Stuff a tbsp of prepared masala into the cone.

  15. 15

    Pull back and fold the cone.

  16. 16

    Seal tightly by pressing firmly.

    Frying samosas:

    heat the oil in a kadhai and deep-fry the samosas on a medium flame

    Serve hot..
