Ingredients

  1. 3large eggs
  2. 240 gsugar
  3. 140 gplain flour
  4. 1 teaspoonbaking powder

    Butter and line cake tin/ cupcake moulds. Set oven the gas5/180*C

  2. 2

    Separate egg yolks, keep egg whites for later. Add sugar to egg yolk and beat for 2 minutes. Add 75ml warm water to yolks and sugar and continue to beat until light and creamy.

    Beat egg whites until stiff peaks form

  4. 4

    Carefully fold flour and baking powder into egg/sugar mix. Then carefully fold in egg whites. Be careful not to beat out the air.

    Place into cake tin and bake for 15-20 minutes. Once out the oven let cool for a few minutes then remove from tin and place on wire rack to cool completely
