Dal Bafla, influenced by the Rajasthani speciality dal Bati, is a popular dish in Madhya Pradesh. Wheat dough is shaped into balls (called bafla), cooked until they become crisp, and then dipped in ghee. The bafla comes with a bowl of spicy dal and onion.

Dal Bafla, influenced by the Rajasthani speciality dal Bati, is a popular dish in Madhya Pradesh. Wheat dough is shaped into balls (called bafla), cooked until they become crisp, and then dipped in ghee. The bafla comes with a bowl of spicy dal and onion.

Preparing Bafla: In a bowl add all the ingredients for bafla.

Knead to a soft dough using lukewarm water.

Cover and keep it aside for 15 min.

In a vessel heat enough water with turmeric powder to cook the bafla in them.

Lift a dough lump, give a round shape then press it like a peda. Prepare all baflas likewise.

Once water is boiled well. Drop baflas in water one by one.

When baflas starts floating remove them from the water and place them on a cloth or kitchen towel.

To roast the baflas, heat a pan, add ghee to it. Once hot, place the baflas.

Roast well until golden brown. We have flipped and cooked the baflas for 10 to 15 mins. Take out baflas in a plate

Preparing Dal: Pressure cook all dals together for 6 whistles and mash them well.

Heat oil in a pan, add mustard seeds, cumin seeds, asafoetida, red chilli powder, turmeric powder and coriander powder mix well.

Add mashed dals and salt. Make them thin by adding water and let the boil for a while.

Add lemon juice at the end and garnish with coriander leaves.

Serving Dal Bafla: Take a bafla, press and break it and add little ghee to it. Serve it with a steaming hot bowl of dal.
