Chicken Rezala

Chicken Rezala is an authentic East Indian white gravy delicacy originated mainly from Bangladesh and highly influenced by Royal Mughlai Cuisine.It's pale white semi thick gravy is smooth like silk.It's rich,it's creamy ,it has the perfect balance of sweetness to heat made normally with poppy seeds, curd,cream and cashew nuts. But I have been bold enough to use sesame seeds instead of poppy seeds and it tasted equally good. Rezala is regal and flavoursome.

Marinate chicken with salt and curd for an hour.Make a paste of sesame seeds,onion, ginger garlic paste,malai and 2 green chillies.Pour oil in a pan and sprinkle half crushed whole garam masala and fry lightly.Add the marinated chicken and toss till oil leaves sides.Add 2-3 drops of mitha attar.Sprinkle salt and sugar to taste while tossing.Heat 1 tbsp ghee and fry 2 dry red chillies.Pour over chicken.

Sprinkle chopped green and red chillies and chopped coriander leaves for garnishing.Serve with jeera rice, naan or roomali roti.
