Beef Stroganoff Casserole (S)

In a small pan, saute' the onion in the TBS of butter and set aside.

In a pot, cook the cauliflower until tender, than drain and chop any large chunks up.

Cook the ground beef in a skillet. When the ground beef is cooked, drain the extra fat off and return to the pan.

Add stock, garlic, sauteed onion, seasonings, sour cream, cooked cauliflower and flour to the meat mixture. Stir and let it simmer for a few minutes. Incorporate it well.
Add a bit more beef stock or a little water if you think it's too thick. It's NOT a thin casserole. - 5
When its well cooked and thickening a bit from the flour, pour into a 9 by 9 baking dish.
Top with cheese. - 6
Bake at 350 for about 20-25 minutes. I like to broil it at the end to brown up the gooey cheese!

Note: you could use 2 cups of a few other veggies if you don’t have cauliflower. Chopped zucchini, broccoli or yellow squash would also taste great! (or a combo of those.)
