Since the rest of us were super distracted making other dishes - I charged my more advanced 8 year old culinary student with making a healthy Mexican soup for the sick ones. This is what she came up with. It was so easy - she didn't even sweat her veggies. It was just, "Everybody in the pool!" Anyway, delicious work kiddo!

  12. 1/2 CupShredded Mexican 3 Cheese [+ reserves]
  13. 1 CanROTEL Tomatoes
  14. 2 tbspFresh Lime Juice
  15. 4Sliced Jalapenos
  16. 1LG Chopped Firm Tomato
  17. 1 CupShredded Cabbage
  18. 2 CupsFresh Mushrooms
  19. 1/2 CupChopped Red Onions

  1. 1

    Throw everything in your pot [except side options] and simmer for 45 minutes. Stir regularly.

Hense my love for the year round super fresh meats, seafoods and crispy fresh vegetables my students have consistently listed for your families picky approval!With that, cooking, teaching and feeding others are obviously 3 of my absolute passions in life. My culinary specialties as an easy going Chef include Asian, Mexican, Cajun, BBQing, Grilling, Irish Pub food, Low Country foods, anything seafood related, extra spicy foods, fresh meat, extra fresh vegetables, US comfort, kid friendly and super fast, quick and easy foods.
