Ingredients

2 servings
  1. 1 cupbesan
  2. 1/4 cuprava/sooji
  3. 1/2 cupgrated coconut
  4. 1/4 cupcoarsely sweet corn (makai ke dane)
  5. 2 cupbuttermilk
  6. 1 tspfruit salt
  7. to tasteSalt
  8. 1/4 tsphaldi powder
  9. For the tempering:-
  10. 1 tbsp oil
  11. 1/2 tspmustard seed
  12. 6-7curry leaves
  13. 4green chilli cut into length
  14. 1 tspsugar
  15. 1/2 tsplemon juice
  16. 1/2 tspurad dal
  17. 1/4 tsphing
  18. 1/4 cup Moong sprouts,steamed
  19. For topping:-
  20. 1/4 cuponions chopped
  21. 2 tbspTomatoes chopped
  22. 2 tbspCapsicum chopped
  23. 1/4 cupcabbage shredded
  24. 1 tspgreen chilli chopped
  25. to tasteSalt
  26. 1 tspItalian seasoning
  27. 1/2 tspdry basil
  28. 2 tbspTomato sauce
  29. 1/2 tspred chilli flakes

Steps

  1. 1

    Combine all the ingridents for the idli batter except fruit salt.

    Tempering- Heat oil in a small pan and add the urad dal, chana dal, and mustard seeds.

  3. 3

    When the seeds crackle, add the green chilli, curry leaves and sautee for a few seconds.

  4. 4

    Pour the tempering over the batter and mix well.

  5. 5

    Add the fruit salt and sprinkle lemon juice over it.

  6. 6

    When the bubbles form, mix gently and pour spoonfuls of the batter into greased idli mould.

  7. 7

    Steam in a steamer for 8to10 minutes.

  8. 8

    Cool slightely, unmould and transfer in a plate.

  9. 9

    For topping:- Heat oil saute onion, green chilli.

  10. 10

    Add all the vegetable, sports and mix well.

  11. 11

    Add the all the sesasoing and mix well.

  12. 12

    Take one idli and spread topping, and grated cheese.

  13. 13

    Put idli in a heat tava and cook for 2 minutes.

  14. 14

    Serve with coconut chutney and tomato ketchup.
