Ingredients

8 servings
  1. cupSemolina -1
  2. 1 tablespoonAll Purpose Flour
  3. 2 teaspoonCooking Oil
  4. Fruit Salt / Eno- 1 pinch of (optional)
  5. 1 tspSalt
  6. To assemble: Chickpeas - 1 cup, boiled
  7. Potatoes- 2 small sized, boiled
  8. 3 tablespoonNylon sev
  9. 2 teaspoonChat Masala
  10. 1 cupYogurt / Dahi
  11. 1.5 teaspoonChilli powder
  12. 1/3 cupTamarind Chutney
  13. 1 teaspoonBlack Salt
  14. 1 teaspoonRoasted Cumin powder

Steps

  1. 1

    In a bowl add all the ingredients listed to make the Raj Kachori. Mix everything well. Add just enough water to make a medium soft dough.

  2. 2

    Cover and rest the dough for 15 minutes. Knead it again and make small balls from the dough. Roll to make medium thick pooris/discs.

  3. 3

    Slide the prepared pooris in hot oil. Press with a spatula to help it puff completely. Reduce the heat to medium low and deep fry in from both sides till golden in colour.

  4. 4

    When done drain on a paper napkin. Let them cool down completely.
    Beat the yogurt and add some salt and 1/2 teaspoon sugar.

  5. 5

    When you want to serve then poke it on top and make a hole in it. Add the chopped potato,chick peas. Pour in some curd and chutney.

  6. 6

    Add some crushed papadi and fill it till the top. Drizzle yogurt, and tamarind chutney on top.
    Add some sev and sprinkle chat masala on top.
    Garnish with mint leave and serve it immediately.
