Mango_Khandvi

Khandvi, also known as Suralichi Vadi, Patuli / Dahivadi. It is a savory snack in Gujarati cuisine and in Maharastrian cuisine also. It is yellowish, tightly rolled bite-sized pieces and is primarily made of gram flour and yogurt.
My Fusion: I have added ripe mango puree to it and change the flavor.
Mango_Khandvi

Steps

Mix all the ingredients required for khandvi in a mixing bowl using a whisk to form a smooth batter.

Rest it for about 10-15 minutes. After this cook it in a non-stick pan or heavy bottom pan and stir constantly so that no lumps are formed. Cook it till it becomes really thick and soft.

Once it is very thick, take a test by pouring the mixture. If it falls immediately (or having running consistency then it’s not done. Cook for another-3 minutes.

Once the batter is ready, Take a foil paper and spread khandvi on it or on the greased inverted Thali / kitchen counter. Spread into a thin layer using a palette knife.

Once it is cool, cut it into strips and roll them tightly.
Heat 1 tablespoon of oil in a pan and add mustard seeds, sesame seeds, green chilies and asafoetida.

When they splutter, pour it over the Mango flavored khandvi. Garnish it with chopped Sprinkles/cilantro/ Mint and grated coconut.
Serve Mango flavored khandvi mint / tamarind Chutney or enjoy it as a morning /evening snack with hot Tea.
