  • as neededroast ham or pork
  • to tasteroast chicken
  • to tastehoi sin sauce
  • to tastesweet chilli sauce
  • 2 pinchesgarlic powder or granules
  • 2 pinchesginger powder
  • 1 pinchChinese five spice
  • 1 pinchsmoked paprika (optional)
  • to tastesea salt
  • to tasteblack pepper (or preferably Szechuan pepper)

    Slice your ciabatta or panini bun and. Load the base with roast ham or pork

    Season with salt, pepper, Chinese five spice, and a couple of pinches of ginger powder, and garlic granules When I'm using Szechuan pepper I don't use paprika, but if I'm using ground black pepper I do

    Now cook your noodles, preferably on the al dente side, strain and sprinkle with a little Xiao Hsing rice wine or sherry to keep the noodles moist. Add straight to your sandwich

    Preheat the oven to gas mark 4, 350°F (125°C)

I'm a designer/artist and I learned to cook when I started making my own Chinese food over 30 years ago. I'm a lover of my native British food, but recently I've developed a taste for American comfort food, especially sandwiches and BBQ (watching too much 'Diners, Drive-Ins, and Dives' probably). 😸 Unfortunately, we don't have any independent US-style diners or drive-ins in my neck of the woods, so I had to learn from recipe books and the Food Network. I'll also be publishing some traditional UK classics in case any non-Brits want to have a crack at Brit grub.
