Fried Chicken Wings with Fish Sauce (so good with rice 😆)

Prepare the ingredients: Rinse the chicken wings with clean water, then rinse again with diluted salt water to remove any odor. Pat dry and parboil for 10 minutes. This will help the wings cook faster when frying. Mince the garlic.

Fry the chicken wings in hot oil over high heat until the skin is crispy and golden brown. Remove and place on paper towels to absorb excess oil.

Sauté the minced garlic in a little cooking oil until fragrant. Lower the heat, then add sugar and fish sauce in a 1:1 ratio (one tablespoon of fish sauce for every tablespoon of sugar). Once you have the right amount of fish sauce and sugar, increase the heat and add the chicken wings. Shake the pan to evenly coat the wings with the garlic-fish sauce-sugar mixture. And it's done 😛
