Ingredients

35 -40 mins.
4 -5 servings
  • For Muthiya dough --
  • 2 cupwheat flour
  • 200 gmgrated bottle ground.(lauki)
  • 1-2Onion finely chopped
  • to tasteSalt
  • 1/2 tspturmeric powder
  • 1/2 tspred chilli powder
  • 2 tbspoil
  • as neededSome fresh chopped coriander
  • as neededSome fresh chopped fenugreek leaves..For flavor
  • 1 tspcumin seeds
  • 1 tspPomegranate seeds
  • For Garlic masala ---
  • 15-20garlic cloves
  • 2-3green chilli
  • 1/2 inchginger
  • 1/2 tspturmeric powder
  • 1/2 tspred chilli powder
  • 1/2 tspdry mango powder
  • 2-3 tspcoriander powder
  • to tasteSalt
  • For vegetable --
  • 2 tbspoil
  • 1 tspcumin seeds
  • 2potatoes..Cut into square
  • 2tomatoes..Finely chopped
  • 3-4onion small sized(don't cut the onion Just mark them with the help of knife)
  • 2apple gourd cut into 4 -6 pieces
  • 5-6lady finger (Cut into two halves or cut into center)
  • to tasteSalt
  • as neededyou can add more seasonal veggies like carrot etc

Steps

35 -40 mins.
  1. 1

    First add all Garlic masala ingredients in a mixer jar..Grind and keep aside.

    Now add all ingredients of wheat flour dough in a big bowl... And mix well...Add half mixture of garlic masala..And knead a semi stiff dough using required water.(add water carefully because lauki leaves it's water too.)

    Take a portion from dough..First make it round..And then give it a shape of muthiya...Make all muthiya similarly.

    Heat a steamer.. Arrange all muthiya..Over a plate and cover it...And cook for 20 -25 min..In steam.

    Meanwhile in a pressure cooker add 2 tbsp oil..When heats..Add cumin seeds.When they cracks..Add remaining half garlic masala.Stir.And fry for half a min.On low to medium flame.Then add chopped tomatoes.Saute.And cook till they gets soft...Add cut veggies..(don't add onion and lady fingers.They will get a soft quickly.)

    Cook the veggies on low flame till they soft.Add lillte water in the mean time.

    Add onion and lady fingers..Along with required water and cook for 1 whistle.

    After opening the lid add fresh chopped coriander.

    Take cooked muthiya and veggies in a serving plate.Pour ghee on muthiya.

  10. 10

    Yummy and tasty Muthiya with Masala veggies ready to serve.Serve hot.Can be served with curd too.
