Steps

Wash potatoes thoroughly and boil it by taking one whistle. Potato should be half Cooked.

Now peel them and poke them with the help of knife.

Shallow fry poked potatoes and keep aside.

Now heat a wok and add oil in it.

Once oil is heated add cumin seeds and asfoateida. Let them crackle.

Now add garlic cloves cashews and onion.

When Onion becomes golden brown add tomato and green chilli.

When tomato becomes soft and mushy turn off the flame. let this mixture to cool.

Once it is cooled completely blend it in smooth paste.

Now again heat a wok and add oil in it. Add cumin seeds.

Now add the tomato Onion paste and mix it.

Add red chilli powder turmeric powder and coriander powder and mix everything.

Cook this masala till it separate oil.

Once masala is cooked pour water and salt as per your required consistency.

When it comes to boil add potatoes in it.

Cook it till potato absorbs flavors.

Now turn off the flame and take it out in a bowl.

Your simple but delicious aloo dum is ready to serve.
