Have you ever found yourself rummaging through the leftovers in the refrigerator for something to eat? That's how this recipe came into being! A little of this, a little of that and VIOLA! lunch is served!

Ingredients

  1. 1 cupcooked spaghetti
  2. 1/4 cuptaco seasoned ground beef
  3. 1/4 cuprefried beans
  4. 1/4 cupreduced fat Mexican blend cheese
  5. 2eggs

Cooking Instructions

  1. 1

    Preheat oven to 350°

  2. 2

    In a bowl, whisk eggs well. Add spaghetti, beans and beef one at a time and stir until well combined.

  3. 3

    Transfer to oven safe dish and top with cheese.

  4. 4

    Bake for 20-30 minutes (depending on size of baking dish) until eggs are set to your preference.

  5. 5

    Serve with your favorite salsa, chopped jalapenos and a dollop of sour cream.
