Guanajuato-Style Enchiladas
Delicious, filling, and super easy!
Steps

Remove the seeds and veins from the chiles, then soak them in hot water.

Blend the chiles, cinnamon, garlic, vinegar, salt, and water until you get a smooth sauce.

Cook the chorizo in a skillet, then add the potatoes and carrots. Mix well.

Dip the tortillas in the sauce, then quickly fry them on both sides in oil. Fill with the vegetable mixture and roll them up into taquitos on a plate.

Top with queso fresco, sour cream, and more vegetables.
