Chicken and Veggie Salad

Wash the chicken and make slits across the length. In a bowl mix pepper, bayleaf powder,garlic powder, oregano, little salt and juice of half a lemon. Mix well and rub this onto the chicken

Let the chicken marinate for fifteen minutes. Meanwhile chop the broccoli into small florets and soak in warm water.

Wash, scrape the skin and chop the carrots to an inch size pieces.

Wash and chop the cucumbers.

Strain the broccoli. Boil some water. Add the broccoli to the boiling water. Only parboil it so that you can retain some crunch. Drain and set aside.

Heat a grill pan. Brush a little olive oil. Place the marinated chicken on the pan and sear it on both ends. Continue to grill/cook regularly flipping it over. Once done remove from heat.

In a bowl mix all the veggies. Shred the chicken using forks or by hand. You can dice it if you want. Toss in the chicken with the veggies.

Add the Italian herb mix to the olive oil and give it a stir. Dress the salad with this mix and serve.
