Mbuzi pilau using a jiko
One of the many ways of making pilau
Steps
- 1
Boil the meat with 1tbs of the ginger garlic paste, let it boil till tender. (reserve the broth for later)
- 2
In a pot add oil, when hot, put the onions and cook till slightly brown, proceed to add in the tomatoes and the remaining 1tbs of ginger garlic paste. Cook for 5 min
- 3
Add in your potatoes and meat, stir the mixture for a few minutes then proceed to add the spices and salt. Cover the mixture and let it cook for around 5-7min.
- 4
Proceed to add the broth you had set aside earlier (use ratio of rice to water 1:2). If broth is not enough, add some water
- 5
After it has boiled for a few minutes, put in the pre-soaked rice and cook till the water dries up
- 6
Remove sufuria from the jiko, add a few pieces of charcoal on top of it, to dry the rice completely, this will take around 15min
- 7
Serve with kachumbari and pilipili, Enjoy😊
