Ingredients

4 servings
  1. 8small unpealed potatoes
  2. 2hardboiled eggs
  3. 1small onion (home grown), sliced
  4. 1ripe tomato (3 colour home grown variety), diced
  5. flat parsley (from the my herb garden)
  6. 1 sprigrosemary (from my herb garden)
  7. 1 sprigthyme (from my herb garden)
  8. 8 tablespoonsunfiltered virgin olive oil
  9. 4 tablespoonswhite wine vinegar infused with estragon
  10. to tasterough salt
  11. to tastefreshly ground black pepper
  12. 1 tablespoonshoney

    Boil potatoes untill soft

  2. 2

    Hardboil your organic eggs (mine is from my chickens in the back yard) normally 10 min from cold water to ready.

  3. 3

    Cut your potatoes in two, and dice your eggs after.

  4. 4

    Add our sliced onion, diced tomato and herbs and give it a gentle stir as not to break the potatoes

    Add your olive oil and vinegar. let it stand for two hours so that the potatoes absorbs all the flavours of the herbs.

    Sprinkle with salt and pepper to taste
