Ingredients

4 servings
  • 500 gtripe washed
  • 1bulb garlic lightly crushed
  • 1onion diced
  • 1quarter cup soy (dark)
  • 3 TBSvinegar
  • 1 TBSsugar
  • 3bay leaves
  • 2 cupswater or enough to cook your tripe
  • 1 teaspoonblack pepper

    In a large bowl marinade tripe in soy sauce, vinegar, onion, garli, black pepper, bay leaves and sugar. Mix well and let it sit covered overnight in a fridge or a minimum of 3 hrs

  2. 2

    Pour your marinated tripe in a pan, pour water and bring it to a boil. When it has started boiling lower your flame to low, cover and let it simmer until cooked to your desired tenderness and the liquid has thicken and reduced.

    Sever while hot with your ugali.
