This is one of my hubby favorites and he doesn't like his plantain fried. I hardly use sweet corn for my food especially during corn season. What I do is to buy our local corn and use as sweet corn

This is one of my hubby favorites and he doesn't like his plantain fried. I hardly use sweet corn for my food especially during corn season. What I do is to buy our local corn and use as sweet corn
Cooking Instructions

Normally I start by blending too of my green pepper till very smooth, then I added it to the pot of beef stock with a little and put it on fire.

Then when the stock water boiled, I washed my rice with salt like two to three time, and pour it in the stock water. Then I add curry, seasoning cubes and bring to boil. I always make sure that the water is a little above the rice, so by the time the water dry out the rice will be a bit tender but not cooked. Then I set it aside

Put another pot on low heat, pour vegetables oil, when the oil is hot, add your chopped onions, fried till translucent pack out, add carrots fry a bit, packout, add green peas fry a bit packout. Set everything aside

Then put the onion back inside the oil, add your pepper, salt and seasonings. Check for taste. If you are okay with the taste. Start putting in the rice gradually, stirring with a spatula till you mix it evenly. Then pour all your friend veggies and mix thoroughly. Off the fire and allow to simmer for few minutes.
