Steps

Peel the plantain, dice and fry and keep aside.

Wash the gizzards and dice.

Put to boil, add spices.

Grate onions, chilli, garlic and ginger together.

When the gizzard is done, strain the broth, add little oil and the grated paste.

Stir fry a little and add seasoning and a pinch of salt.

Stir and add the fried plantain.

Add a little amount of water and cook on a low heat.

Chop sweet pepper and add. Cook for 2 mins.

Serve with coconut jullof rice.
