Tricia's Carrot Basil Chicken Soup

This recipe was inspired by my sister Diana's Chicken Tomato Basil Soup. She got me hooked on it years ago. It was so delicious but alas it contained many ingredients that just didn't agree with me...including the illustrious night shade vegetable, TOMATOES! Back then I had no idea that popping open a can of progresso and adding frozen microwave grilled chicken strips, Mueller's duram wheat elbows for 88 cents a box, and shredded mozzarella straight from the cow would all be on my "do not eat list!" A sad discovery indeed! Years have gone by and finally, as I pondered what to do with the left over carrot pulp from my fresh morning veggie juice, I had a moment of inspiration. This recipe is the result!! Please keep in mind that unless I'm baking, I rarely measure anything...especially spices! I usually let my taste buds do the work. These measurements are a close guestimate. Also, check out my Carrot Spaghetti Sauce for more Tomato free yumminess. Enjoy!!

Ingredients

  1. 3 cupsCarrot Pulp
  2. 2 cupsChicken Stock
  3. 2Organic Chicken Breasts
  4. 2 TbspExtra Virgin Olive Oil
  5. 2 tspGranulated Garlic
  6. 2 tspGranulated Onion
  7. 1 tspRubbed Sage
  8. 1 TbspDried Parsley
  9. 2 TbspDried Basil
  10. 2 tspSea Salt
  11. 1 Tbspbalsamic vinegar
  12. 1 Tbsplime juice
  13. 1 tsphoney
  14. 1 cupdry Tinkyada elbow pasta
  15. 2 ouncesgoat cheese

Steps

30 mins
  1. 1

    Boil noodles according to package, drain and set aside

  2. 2

    Dice Chicken Breasts into small pieces

  3. 3

    Season chicken with 1/2 tsp each of seasalt, garlic and onion

  4. 4

    In large skillet, saute chicken in olive oil until brown and done all the way through and set aside

  5. 5

    Add remainder of ingredients except goat cheese to Vitamix Blender and select Hot Soup setting.

  6. 6

    Blend pushing ingredients into blades until thick creamy hot soup is steaming

  7. 7

    Reheat skillet and add all ingredients to the hot skillet just long enough to deglaze the pan

  8. 8

    Top with goat cheese and serve
