This recipe was how I grew up eating Plantain pudding , from my mother. ..

Steps

If you're using fresh palm fruit as the bas, boil and pound it to sieve put the juice for later use.

Peel the ripened black Plantain and blend or pound until smooth.

Mix the blended Plantain, Plantain flour, blended peppers, crayfish in a bowl.

If you're using palm fruit juice add 3 cooking spoin it to the plantain mix and stir to get a thick l, not watery paste.

If using palm oil, add 3 cooking spoon to the plantain mix. Add water to the mix and stir thoroughly to combine.

Add seasoning cubes and salt and stir to combine..

Wrap the Plantain pudding with washed clean Plantain leafs or Uma leafs. Or cook in small cans.

Line the pot with plantain leafs and steam the wrapped pudding for 1hr

Best eaten warm
