Ingredients

  • 1chub ground chorizo (beef or pork)
  • 8-10eggs
  • to tastesalt and pepper
  • 1 bagfrozen tater tots
  • 1small sweet onion
  • Sour cream
  • 1 jarLa Victoria hot sauce (mild or medium
  • 1 bag (10 inch)tortillas
  • Mexican blend cheese
  • 3/4 cupmilk

    Brown the chorizo in a large skillet

  2. 2

    Cook tater tots according to package directions

  3. 3

    Whisk together milk and eggs then add to browned chorizo in skillet. Cook till eggs are done.

  4. 4

    Add salt and pepper to your own taste.

  5. 5

    Finely chop sweet onion and add for 3 to 4 minutes to soften a bit.

  6. 6

    Heat tortilla by microwave or stove top

  7. 7

    Assemble chorizo mixture and tater tots in tortilla. Add sour cream, taco sauce, cheese, roll up the tortilla and enjoy.
