Delicious and unique combination of flavours make this cake intresting. Double layer with vanilla cake in the bottom and top layer with carrot cake. And topping of fresh layers of fruits make this cake more yummy.

In a large mixing bowl add oil, yoghurt, sugar, vanilla essence and whisk very well.

Sieve flour, baking powder and soda thrice. Then start pouring dry mixture into wet mixture spoon by spoon. Incorporate together and start adding orange juice to make a smooth bater.

Divide the cake into two, in one part add caramalized carrot(I prepared this prior hand by cooking the grated carrot with sugar until it turns caramalized) and whisk the batter very well.

Preheat the pan for 10 mins with lid on. Grease the tins with butter and dust flour. Pour the vanilla cake in one tin and caramalized carrot cake in other tin.

Now place the tins and bake both the cake. After 45 minutes check both the cake by inserting toothpick.

Allow the cake to cool completely. Demould both the cakes and place the vanilla cake, apply sugar syrup then apply strawberry jam and spread mix fruits. Now place the other cake.

Decorate the cake with fresh winter fruits and dry fruits available in the market.

Slice the cake and serve.
