Ingredients

50 minutes
8 good servings
  • 200 gbutter
  • 200 gsugar
  • 1lvl tsp cinnamon
  • 1lvl tsp ginger
  • 1lvl tsp ground cloves
  • 2 tbspmolasses
  • 6apples in quarters and cored
  • 125 gbutter
  • 125 gsugar
  • 2eggs (also works with egg-replacement powder)
  • 225 gself-raising flour
  • 200 mldry cider
  • 1/2 tspbicarbonate of soda
  • 2oranges - zest only
  • clotted cream to serve

Steps

50 minutes
  1. 1

    Butter, sugar, spices, molasses. all in frypan on heat to make syrup. add apples for 2-3 mins to soften

  2. 2

    Butter, sugar and eggs in bowl. stir. add half flour and stir. add cider. stir. add remaining flour and bicarbonate and stir. add orange zest, stir.

  3. 3

    Pour Apple mix and half sauce in loose bottomed cake tin. add sponge mix and bake at 180C/350F for 35 mins

  4. 4

    Flip on to plate, serve with spoon of clotted cream and hot sauce

I'm vegetarian & allergic to eggs, but my wife eats meat. I prepare all meals, often converting meat recipes in to vegetarian ones. Many of my recipes show measurements for both meat and vegetarian versions, often for the same meal... simply cooking a common sauce in one pan then using seperate pans for meat and veg to combine with sauce when served
