Mulyaachi Koshimbir (Radish Salad)

Mulaa or Radish as it is called in English, is an extremely nutritious vegetable. Radishes are grown and eaten throughout the world, but mostly as a raw salad. Some Indian cuisines use these healthy roots for cooking daals or vegetables or parathas too.

Radishes have numerous varieties, varying in size, colour and flavor. Here I have used the white radishes commonly found in the winters in India. They have a slightly sharp pungent flavour. The leaves of this root too are used in salads and cooking.

Mulyaachi Koshimbir (as called in Marathi), means a Radish salad. The pungency of the radish and the leaves here is eliminated by simply crushing and squeezing the leaves and radish. The other ingredients added give this koshimbir a lovely taste. This is a commonly made salad in our house in the winters as we get fresh and lovely radishes exactly during this season. As it’s rightly said, it’s good to eat seasonal vegetables and fruits!

Ingredients

  • 1 cupGrated Radish
  • 1 1/2 cupChopped Radish Leaves
  • 2small Onions
  • 1/2 cupFresh Grated Coconut
  • 1Green Chilli…. Optional
  • 1 1/2 tspSugar….. Or as desired
  • to tasteSalt

Steps

  1. 1

    To make Mulyaachi Koshimbir, start by grating the radishes and finely chopping the onions, green chillies and the radish leaves.

  2. 2

    Crush the chopped leaves slightly and squeeze a bit. Transfer to a mixing bowl.

  3. 3

    Tightly squeeze the grated radishes to remove as much water as you can. Add this to the mixing bowl.

  4. 4

    Add the rest of the ingredients just before serving and mix well. Adjust seasoning and sweetness as per taste.

  5. 5

    Serve this delicious and nutritious Mulyaachi Koshimbir with lunch or dinner as an accompaniment to a traditional meal!
