Mix the coconut flour with 1 duck egg and stir until well combined. Add a little black pepper.

Add the mussels and mix well. Add keto soy sauce and chopped green onions, then stir to combine.

Heat a skillet over medium-high heat and add coconut oil. Once hot, pour in the mixture and spread it evenly.

When the pancake is crispy, pour the remaining beaten duck egg over the top. Gently separate the pieces and flip them. Cook to your preferred level of crispiness.

Once the mussels are cooked, move them to one side of the pan. Add a little more coconut oil, then sauté the minced garlic until fragrant. Add the bean sprouts and stir just until slightly wilted.

Serve hot with keto chili sauce.
