Beef with Chile for Birria

Trim the fat from the beef and cut it into medium pieces.

Heat the oil in a nonstick skillet and add the beef.

Stir until the beef starts to brown.

Rinse the chiles and cook them in the water.

Blend the chiles with all the sauce ingredients until smooth.

Strain the sauce over the browned beef. Cover and cook for about 15 minutes.

Taste and adjust seasoning. If the beef is tender, it's ready! Serve hot with refried beans and a salad or rice.
