I love green peppercorns—whether fresh or in brine, they're delicious. Green peppercorns are milder than black or gray pepper, but they add great flavor to dishes and really wake up your taste buds. Truly a treat!

Season the pork chop with salt, black pepper, and thyme. Let it marinate for 15 minutes.
In a sauté pan, heat a drizzle of oil and brown the pork on both sides without burning it.
Add a splash of water, bring to a boil, then reduce the heat and cook until the water evaporates and the meat starts to fry again. - 2
Remove the pork from the pan and set it aside on a plate. Keeping the heat on low, deglaze the pan with the white wine, scraping up any browned bits with a spatula. Bring to a boil and let it reduce slightly to thicken.

Add the lightly crushed green peppercorns and the crushed garlic. Stir well, then add the cream. Mix and let the sauce thicken.
If needed, add a little more wine or cream to taste. Turn off the heat, pour the sauce over the pork, and serve immediately. Enjoy!
