Compote surprise cupcakes

When you bite into these, it's sheer heaven. The soft,sweet sponge contrasts the sour tang of the compote. But also just make the cupcake base on its own, this is my go-to recipe anyway... IT'S ABSOLUTELY DELICIOUS!

When you bite into these, it's sheer heaven. The soft,sweet sponge contrasts the sour tang of the compote. But also just make the cupcake base on its own, this is my go-to recipe anyway... IT'S ABSOLUTELY DELICIOUS!
Steps

Pre-heat the oven to 180c*.Cream the butter and sugar until very pale and fluffy. Add the eggs
- 2
Add the vanilla and beat some more. Then gradually add the flour and baking powder.

Add the milk and spoon into cupcake cases. And into the oven they go for 12-15 minutes until pale gold.

Meanwhile, put some berries, sugar and water and boil until the cupcakes are ready

With a wooden spoon, poke holes in the middle of the cupcakes and put the compote into the hole
- 6
Eat!
